Whether you caught it fresh or just came home from the market, halibut is one of the most highly sought after fish meats. When I stumbled across this halibut recipe, I loved it immediately and had to share.

If you like savory flavors that compliment white fish and if capers peak your interest or appetite, this savory halibut recipe is one you NEED to try!

And don’t let this scare you… but it kind of reminds me of In-N-Out’s animal style fries except fish. I swear in the classiest way possible.

How To Cook Halibut

Halibut can be cooked a number of ways, including on the stove, in the oven or even on the grill. In my opinion, pan seared is the way to go for most of the better halibut recipes out there.

What Temperature To Cook Halibut To

The general consensus for what temperature halibut should be cooked to is an internal meat temperature of between 130 F and 135 F.

Does Halibut Need To Be Cooked Through?

Halibut isn’t a very common meat to be consumed raw and if doing so, do your research and prepare it accordingly. I would advise following the notion that halibut should be cooked very precisely to the temperatures of 130-135.

Anything less that 130 degrees will result in a texture that does not flake like it should.

However, overcooking is nearly just as bad. Overcooking halibut can result in a very dry and tough texture that will not plate well.

How Long To Cook Halibut

Generally speaking, halibut shouldn’t take more than a few minutes on medium/high heat.

The cooking duration depends completely on the temperature and the thickness of the meat, but in general, cooked on medium/high heat, halibut should take between 4 and 8 minutes per filet.

What Texture is Halibut Meat?

Halibut is known for its classic flaky white fish texture. However, it has a density to it that is more steak-like and substantial than most white fish. When prepared correctly and according to the halibut recipe, it should flake apart and melt in your mouth.

Ingredients

  • Two 8-ounce filets of fresh halibut
  • Salt (To Taste)
  • Freshly Ground Black Pepper (To Taste)
  • Olive Oil (1 Teaspoon)
  • Unsalted Butter (2 Tablespoons – Partitioned 1 and 1)
  • Minced Yellow Onions (1/8 Cup)
  • Finely Minced Garlic (1 Clove)
  • White Wine (1/4 Cup)
  • Freshly Squeezed Lemon Juice (1 Teaspoon)
  • Heavy Cream (1/4 Cup)
  • Capers (2 Tablespoons)

Optional:

  • Chopped Fresh Dill
  • Lemon or Lime Wedges for Garnish

Instructions

Step 1: Sprinkle both sides of the halibut steaks with salt and freshly ground pepper.

Step 2: Place a skillet over high heat. Add olive oil and 1 tablespoon of butter and ensure the pan is evenly coated.

Step 3: Sear filets until a golden brown for 1-2 minutes per side. Be sure to flip each filet only once and remove filets from skillet to plate.

Step 4: Lower the heat to a medium setting. Add the remaining tablespoon of butter into the pan alongside the minced onions. Sauté until the onions become translucent.

Step 5: Once the onions are translucent, add the minced garlic and sauté for an additional minute.

Step 6: Pour the white wine and lemon juice into the pan, stirring and allowing the liquid to undergo a reduction by half for approximately 2 to 3 minutes.

Step 7: Add the heavy cream, resume simmering, and allow the sauce to thicken over the next 3 minutes. Then add the capers.

Step 8: Plate the filets, drizzle the cream sauce atop the filets. Optionally add garnishes.
